Add chicken breasts to a bowl, drizzle with olive oil, season with salt, pepper, oregano, garlic powder, smoked paprika, and baking soda to soften the fibers. Add the zest and juice of the lemon and optional yogurt. Mix well and ensure chicken is at room temperature, not cold.
Let the chicken marinate outside the fridge for 30 minutes so it cooks evenly.
