
Dirty Enchilada Cabbage
A high protein, low carb one-pan dinner made with ground beef, cabbage, peppers, and enchilada sauce, topped with cheese and greek yogurt or sour cream.

Ingredients
Steps
Finely dice the red onion, garlic, bell pepper, and jalapeño peppers. Set them aside separately.
Remove the core from the cabbage and roughly chop into bite sized pieces. Set aside.
Bring a pan to medium heat, add olive oil, then add the diced onion and garlic. Sauté for 2-3 minutes.
3 minAdd the ground beef, season with salt, fajita or taco seasoning, smoked paprika, garlic powder, and cayenne. Use a spatula to finely mince the meat as it cooks.
When the meat is almost cooked through, add the bell pepper and jalapeño, pour in the enchilada sauce, then add all the cabbage (it will wilt down) and cover.
Cook covered for 10-12 minutes so the cabbage cooks down. Mix to coat the cabbage, then cook uncovered for another 4-5 minutes until excess liquid is absorbed.
16 minTop with finely shredded cheese and cover for 2 minutes so the cheese melts.
2 minTop with greek yogurt or sour cream, lots of cilantro, and lime juice.
