Ingredients
Steps
Finely chop the onion and add it to a pan over medium-high heat with nonstick spray.
2 minCook the onion for 10-15 minutes, stirring occasionally and adding small splashes of water as needed to soften, until browned and caramelized. Remove from the pan and set aside.
15 minAdd the ground beef to the same pan with Montreal steak seasoning. Cook until fully browned, breaking it up into small crumbles as it cooks.
8 minLay one egg roll wrapper down in a diamond shape.
1 minAdd 1/2-1 slice cheddar, about 3 Tbsp cooked ground beef, caramelized onions, and chopped pickles.
1 minFold the bottom corner over the filling, tuck in both sides, then roll tightly.
1 minBefore sealing, dip your finger in egg wash and brush the edge to seal the egg roll shut.
1 minRepeat until all 10 egg rolls are assembled.
10 minHeat 1 Tbsp avocado oil in a pan over medium-high heat.
2 minAdd egg rolls seam-side down and cook for about 2 minutes per side, rotating until golden brown and crispy all around.
8 minFor the smash sauce, mix Greek yogurt, sugar-free ketchup, pickle juice, and paprika until smooth.
3 minServe hot with smash sauce and enjoy!
