Mix the flour and potato starch together and season with the same spice blend used on the chicken.
Dip each chicken strip into sparkling water, then coat in the seasoned flour and potato starch mixture.
Fry the coated chicken tenders until golden, crispy, and cooked through.
In a saucepan, combine minced garlic, soy sauce, water, minced ginger, and honey; bring to a simmer.
Mix 1 tsp potato starch with a little water and stir into the sauce to thicken.
Toss the cooked chicken tenders in the honey garlic sauce and garnish with parsley flakes if desired.
