Finely dice 1 medium sweet potato so it cooks fast. Drizzle with 1 tsp olive oil, season with salt, pepper, 2 tsp onion powder, 1 tsp chipotle powder, and 1/2 tsp sweet paprika. Add to a tray and roast in the oven at 400F for 22-25 minutes.
25 minCook 1lb lean ground beef in 1 tsp olive oil. Season with salt, pepper, 1 tbsp chipotle powder, 1 tbsp onion powder, 1 tbsp oregano, and 1 tbsp sweet paprika. Mince it down to small pieces with a spoon or spatula and cook until browned and almost crispy, about 15-17 minutes.
17 minOnce the sweet potato is roasted, divide it into 4 serving bowls or meal prep containers. Add a large handful of finely shredded lettuce, 1/3 cup cottage cheese, 4oz of cooked beef, half a small avocado, finely diced red onion, a handful of chopped cilantro, and your favorite sauce.
For the sauce, mix 2 tbsp mayonnaise with 1/4 cup sriracha, 2 tbsp rice vinegar, 1/2 tsp soy sauce, 2 tsp powdered monk fruit sweetener, the juice of 1 lime, 1 grated garlic clove, and 1 thinly sliced scallion or chopped cilantro. Season with salt and pepper, mix well, then taste and adjust.
Top with any other veggies you like, chili flakes, and sesame seeds, then enjoy.
