
High Protein Chicken Bacon Ranch Burritos
Easy 60g protein meal prep burritos filled with seasoned shredded chicken, a creamy bacon ranch cottage cheese mixture, mozzarella, and cilantro rice, wrapped in low carb tortillas for freezer-friendly meal prep.

Season the chicken breast with chilli powder, cumin, salt, black pepper, smoked paprika, garlic powder, onion powder, and oregano (or use taco seasoning).
Cook the seasoned chicken breast until fully cooked through, then shred or dice it.
Dice the bacon strips and cook until crispy.
In a bowl, mix the cottage cheese, ranch seasoning, chipotle in adobo sauce, lime juice, diced garlic, and light mayonnaise to make the creamy ranch mixture.
Combine the cooked chicken with the ranch mixture, cooked bacon, grated mozzarella, and chives.
Mix the cooked white rice with cilantro/coriander.
Heat tortillas one by one on a pan over low heat for about 30 seconds per side to prevent breaking.
1 minLay out each tortilla and add about 100g of the cilantro rice and a portion of the chicken bacon ranch mixture.
Roll each tortilla tightly into a burrito, repeating until all 10 are assembled.
Wrap burritos individually in foil and freeze for meal prep.
To reheat: remove foil, wrap burrito in a paper towel, and microwave for about 2 minutes to thaw and warm the middle.
