Chili Garlic Chicken Fried Rice

Slow cooker chili garlic chicken paired with oven-'fried' rice, mixed veggies, and eggs, finished with a low calorie spicy mayo. Great high-protein meal prep recipe.

  1. Combine chicken thighs, chili garlic sauce, soy sauce, honey, rice vinegar, minced ginger, and salt & pepper in a slow cooker.

  2. Cook on HIGH for 2-3 hours or LOW for 3-4 hours until chicken is tender.

  3. Preheat oven to 475°F. Spread day-old cooked rice mixed with soy sauce, fish sauce, honey, rice vinegar, and sesame oil onto a sheet pan.

  4. Switch oven to HIGH broil (about 525°F) and cook the rice, checking every 5 minutes, until crispy bits form and it browns slightly, about 10-25 minutes.

  5. Scrape edges and mix the rice, then top with frozen mixed veggies. Return to oven under broil for 10-15 minutes.

  6. Add the rice and veggies to the slow-cooked chicken.

  7. On the same sheet pan, add the egg and egg white mixture. Bake for 3-4 minutes or until mostly cooked through.

  8. Chop the cooked eggs into small pieces and add to the fried rice and chicken.

  9. Add the additional sesame oil and chopped green onions, then mix everything together.

  10. For the spicy mayo, combine skyr/greek yogurt, light mayo, gochujang, sriracha, a splash of rice vinegar, and salt & pepper. Add water until desired consistency is reached.

  11. Divide into 10 equal servings. Store frozen (lasts at least 3 months). To reheat, remove lid, cover with a paper towel, and microwave 4-5 minutes, mix, then microwave about 1 more minute to finish.
